Prep Time: 25 mins (plus 2 hrs Chilling)
Serves: 4-6
There are few desserts more universally loved than a rich, airy chocolate mousse. Light yet indulgent, velvety yet satisfying, it’s a perfect balance of texture and flavour. By introducing Sheridan’s Coffee Layered Liqueur into the mix, this chocolate mousse takes on an irresistible depth. The coffee and cream layers of Sheridan’s enhance the natural richness of the chocolate, creating a dessert that’s smooth, luxurious, and sophisticated.
It’s the kind of dish that feels extravagant but is surprisingly simple to prepare — ideal for dinner parties, romantic evenings, or whenever you want to elevate dessert into something unforgettable.
Ingredients
200g good-quality dark chocolate (70% cocoa works best)
3 large eggs, separated
50g caster sugar
200ml double cream
75ml Sheridan’s Coffee Layered Liqueur
Whipped cream and chocolate curls (for garnish)
Method
Melt the chocolate gently in a heatproof bowl over simmering water (or in the microwave in short bursts). Set aside to cool slightly.
In another bowl, whisk the egg yolks with the sugar until pale and creamy.
Slowly fold the melted chocolate into the egg yolk mixture.
Whip the double cream until soft peaks form, then fold into the chocolate mix.
In a clean bowl, whisk the egg whites until stiff peaks form. Gently fold into the chocolate mixture to keep it airy.
Finally, stir in the Sheridan’s until fully incorporated.
Spoon into serving glasses and chill for at least 2 hours.
Before serving, top with whipped cream and chocolate curls.

Be gentle when folding in egg whites to keep the mousse light and airy.
Prepare the mousse the day before for even deeper flavour.
