The Sheridan’s Chocolate Mousse is indulgence in its silkiest form. Light yet rich, airy yet satisfying, this classic dessert gets an irresistible twist when you add Sheridan’s Coffee Layered Liqueur. Its coffee-and-cream character deepens the chocolate flavour while adding a smooth, velvety finish.

Ingredients
200g good-quality dark chocolate (70% cocoa works best)
3 large eggs, separated
50g caster sugar
200ml double cream
75ml Sheridan’s Coffee Layered Liqueur
Whipped cream and chocolate curls (for garnish)
Method
Melt the chocolate gently in a heatproof bowl over simmering water (or in the microwave in short bursts). Set aside to cool slightly.
In another bowl, whisk the egg yolks with the sugar until pale and creamy.
Slowly fold the melted chocolate into the egg yolk mixture.
Whip the double cream until soft peaks form, then fold into the chocolate mix.
In a clean bowl, whisk the egg whites until stiff peaks form. Gently fold into the chocolate mixture to keep it airy.
Finally, stir in the Sheridan’s until fully incorporated.
Spoon into serving glasses and chill for at least 2 hours.
Before serving, top with whipped cream and chocolate curls.
