Ingredients
For the choux pastry:
100g plain flour
75g unsalted butter
200ml water
3 medium eggs
For the filling:
300ml double cream
50g icing sugar
75ml Sheridan’s Coffee Layered Liqueur
For the glaze:
100g dark chocolate
50ml double cream
Method
Preheat oven to 200°C (180°C fan) / 400°F.
In a saucepan, heat the butter and water until boiling. Remove from heat and stir in the flour quickly until a dough forms.
Beat in the eggs one at a time until smooth and glossy.
Pipe onto a lined baking tray in éclair shapes.
Bake for 20–25 minutes until puffed and golden. Cool completely.
Whip the cream with icing sugar until soft peaks form, then fold in Sheridan’s.
Slice éclairs lengthways and pipe in the Sheridan’s cream filling.
For the glaze, heat the cream and pour over the chocolate. Stir until smooth and glossy.
Dip the tops of the éclairs into the glaze, then allow to set before serving.
