Ingredients
200 g digestive biscuits, crushed
80 g butter, melted
500 g cream cheese
100 g sugar
2 eggs
100 g pumpkin purée
75 ml Sheridan’s Coffee Layered Liqueur
50 g dark chocolate (for cobweb garnish)
Method
Mix the biscuits and butter, then press into the base of a springform tin and chill.
Beat the cream cheese, sugar, and eggs until smooth.
Fold in pumpkin purée and Sheridan’s.
Pour over the base and bake until just set, then cool.
Melt the chocolate and pipe a cobweb design across the top.
Chill in the fridge until firm before serving.
