Ingredients
200g sponge fingers (ladyfingers)
250g mascarpone cheese
2 eggs (separated)
100g caster sugar
2 shots espresso (cooled)
Cocoa powder (to dust)
Method
Whisk egg yolks with sugar until pale and creamy.
Fold in mascarpone until smooth.
Whisk egg whites to stiff peaks and gently fold into the mascarpone mixture.
